1. Get your paperwork in order. If you've been married before, you'll need proof of your dissolution of marriage. This needs to be officially translated and processed through the local Greek consulate.
2. Get your family in order. Is everyone you know and/or share genes with ready for the extra expenses and planning for a destination wedding - even a destination as great as Greece?
3. Plan, plan, plan - and relax. "Bridezillas" normally do not do well with the sometimes casual attitudes of hotel and venue operators. If perfection is your goal, contact a Greece-based wedding planner. Hotels which host many weddings in Greece will usually be able to assist with your planning.
4. It's a matter of faith - and it matters more in Greece than in many other places. If you are to be married in a picturesque cliffside Greek orthodox chapel, you both need to be in good standing in the Greek Orthodox faith and will generally need to provide documentation from your local priest.
However, if you want a picturesque location but you don't meet the religious requirements, many localities are happy to have the mayor perform a civil ceremony in an equally gorgeous location.
