I found accommodation for around 50Euro/night in Mykonos, Paros, Santorini and Crete in the beginning of July. I would like to be flexible enough to alter my length of stay. If I book NOW for say 4 nights, but only stay 3 nights, am I liable to pay for the last (4th) night? Also, what is the chance of not getting a room arriving a day early at a next island? ~ I.P.

Thanks for the question. Individual hotels may vary. I don't THINK you'll have trouble but technically, they can charge you under Greek law, though this is more likely to be enforced on single-night weekend stays that were meant to be two nights. This policy is also affected by what day of the week it is, and if they would have been very likely or definitely able to rent that room. In that case, your default represents a real, measurable loss to them rather than a theoretical loss, and you're more likely to be charged.
If after day one you realize you will not be finishing your stay, let them know. If you back out as early as possible, it's more likely that they can re-rent your room, and you'll be less likely to be charged.
The reverse applies when arriving early. On a Friday or Saturday, it's more likely you could have a problem finding a room. On a Monday, not as likely. This year, with the uncertain impact of the coming Athens Olympics on July travel, it's hard to predict whether rooms will be plentiful or tight.
It's always good to ask the hotel about policies ahead of time, even if you have booked through a broker. If you have the name of the hotel you can still contact them directly and and ask via email.
